I don't like any snapper but vermillion snapper (bee liner). They are a smaller variety.

My daughter and her husband deep sea fish often and have caught some big fish like that. I'm not fond of snapper, it seems too chewy for my taste. Maybe it's how it's prepared.

Snapper is too strong for my taste. Probably why Paul Prudomme started burning it....:wink:

A good jambalaya with that fish would be fine. Slow cooked.

Snapper is really good stuff and I had NO IDEA they got that big. If thats the same kind of snapper you get in restaurants

The snapper I use to catch in the Gulf of Mexico was probably red drum (http://myfwc.com/wildlifehabitats/profiles/saltwater/drums/red-drum/) - and a good size was 4-6 lbs. Larger than that and they were tough. It may not be correct to call them red snapper.

That is the type I am familiar with and it is delicious

I try to avoid any fish that is not fresh. That is my fate - decided for me as I grew up on the Gulf Coast.
