My son, who does a lot of baking, was complaining about the cost of vanilla, and one of my co-workers mentioned that his wife has brought back big bottles of it from Mexico, where it's extremely cheap. I told my son this, and both he and my wife said that the vanilla from down there is very low quality. I wouldn't know one way or another, actually, but there you are.
When you use wine or liquor in cooking, it cooks off the alcohol
When I make pasta sauce, I put semi dry red wine, like cabernet, merlot, in after I sautee the onions and garlic, I cook the wine down until the alcohol cooks off then I add the tomatoes.
Same with the vanilla bourbon, I would cook it down before I added it
