    That was a good article in that it gave info on the different types of fat. The one thing that makes me look at it less positively is the fact that 'Center for Science in the Public Interest' is the first on the list at the bottom. Anytime you see that name, careful.

    Olive oil can become rancid too. It's important to remember not to keep any kind of cooking oil around for more than 6 months or less in warm weather.

    Right. Olive oil is not the best oil to cook with. For high heat I use grape-seed oil or coconut oil. But I never use vegetable oil or margarine.

    I typically use olive oil for everything but I don't fry over high heat. I usually just sweat my garlic and onions, for example. I don't fry meat or anything like that. Just vegetables so I don't have to have a high temperature.

    Keep oil in the frig. I've been doing this for years. I don't keep olive oil in the frig (unless i have opened a bottle and i don't intende to use it for awhile) because it seems to keep very well 'on the shelf'. BUT i keep it in a dark place until i'm ready to use it.

    I got the following info from a chef I did a cooking class under. Olive oil is not good for extended or high heat cooking. But you can improve that by using a combination of eighty percent corn oil and 20 percent olive oil. You still get the flavor but the benefit of being able to go a little higher on the heat than you would otherwise with olive oil alone.

    I tend to avoid high heat cooking altogether. I fry meat in it's own fat. I don't worry about the shelf life because I use it often enough.

    I had started to buy corn oil in the smallest package that i could. Now since Christmas is coming up i've been buying the 32 oz containers but they go into the frig. If anyone has ever smelled rancid oil, they'd be more careful with the stuff. 10 or so years ago, germany would prosecute any restaurant owners for using oil over 3 days old. Don't know if they still do that. I bet there is oil as old as Social Security in the frying vats at McDonalds.

    I liked their fries more when they fried them in lard. So tasty...

    I keep olive oil around for 2-3 months. I typically by quarts but I'll get whatever premium oil I can find on sale. Must be "first cold-pressed".
