How about the roasted garlic, fresh ginger and Chinese five spice?

I really don't think it was the milk but I followed the recipe as was, I didn't really notice that you added and that probably would have made a difference.

I might not have wanted to use a 5 spice though... in fact I think I'd eliminate the miso and do it again with the onions, garlic and maybe hungarian paprika.

    Sounds good!

I'm definitely making this soup again soon. We really enjoyed it. I hope your next go 'round with your ingredients is more enjoyable.

Not putting in the ginger probably made a difference. Carrot soup is not much different than butternut squash soup. Both benefit from the spiciness of ginger and even a little nutmeg. I know what you mean about miso though - it tastes odd to me as well. I'd use chicken stock.

I'm probably going to give it another go and make adjustments, I do like the concept. Might smoke/char the carrots too maybe, we'll see.

Yeah, I was contemplating stock but opted for milk. I don't think the milk was the problem though.

The celery was a bit stringy though, I did puree it before adding but those little strings linger. Might just do more onions too next time.

I dig getting started with stuff like this and messing around.

Here's a handy pounds to cups for vegetables translation: https://www.almanac.com/content/meas...es-pounds-cups

That recipe called for a pound of onions: 1 pound = 4 cups sliced = 2 cups cooked

Here's another well-rated carrot soup recipe:

Another FYI - you can buy pureed ginger in a jar. (I hate chopping ginger).
