The Bible tells a story on many levels. There's the text of meanings written by specific authors in different places and times. There's the plain story that has to make sense or else people would reject and forget it. Layered on that is the story of a people and their relationship with God and their purpose and destiny. But I always begin with the text.
Textually, the main curiosity I see in Genesis 2 is the continuance of the first creation story, and then mid-sentence Gen 2:4 it ends and a second creation story begins.
Gen 2:4 These are the generations of the heavens and of the earth when they were created, in the day that the Lord God made the earth and the heavens
Both are creation stories but the order of creation is different, the names for God are different, amongst other differences--see, for example, The Two Creations in Genesis.
There has to be significance to that.
I think the first focuses on a declaration of their relationship to God and the second the beginning of a narrative about their purpose.

Gen 1 God creates man and woman in "our" image.
26 And God said, Let us make man in our image, after our likeness: and let them have dominion over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth.
27 So God created man in his own image, in the image of God created he him; male and female created he them.
Gen 2 man and woman are created seperately:
7 And the Lord God formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a living soul.
Gen 1 God tells them they can eat all fruit:
29 And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.
Gen 2 God tells Adam:
16 And the Lord God commanded the man, saying, Of every tree of the garden thou mayest freely eat:
17 But of the tree of the knowledge of good and evil, thou shalt not eat of it: for in the day that thou eatest thereof thou shalt surely die

In both man is put in dominion:
