    A Fun Moment

I am working my way through all the wine I made over the last seven years. I discovered an unopened bottle of German Spiced Wine. My wife and I make wine every year for friends. This bottle was from the 2013 batch. The cork looked good.

So I gently opened it. The cork should have been a two year cork. Fortunately it was a better grade cork. When I opened it the wine energetically left the bottle. It was a Purple Old Faithful. More than half of the bottle ended on the floor and all over the front of the counter.

I did get one good glass. It was quite delicious. It took me 30 minutes to clean up the kitchen.

Note to self: open old bottles of wine in the sink.

I wonder if you put a fine needle through the cork and let it sit for half an hour whether you could avoid the Mount Vesuvius scenario?

Under great pressure the cork gets compressed. It is worth trying.

It reminds me of the physics of a pressure cooker.

Here is something you might enjoy trying out making with your wife if you haven't before. It is Korean rice liquor called Makgeolli. It looks like it would be fun to try and make it. :) I don't drink, but I think even I would like to give this a try, and I would really like to know what it tastes like. It looks really good. https://www.maangchi.com/recipe/makgeolli

I don't particularly like the taste of rice wine, but it mixes well with juices.

I opened a 2012 bottle of Carrot and Black Pepper wine yesterday. I uncorked it in stages, a half inch at a time. I let the bottle stand for five minutes between half-inch pulls. It worked to equalize the atmospheric pressure with the pressure inside the bottle.
