I totally understand that. I used to use about half honestly. Then I got addicted to the heat. I think I got immune and it didn't seem right without the extra peppers after that. I got addicted to the way it burns. To me salsa is fun to eat. Also I used to eat it a lot and my Old man would make it hotter so that I wouldn't eat as much, and it would last longer. That backfired. LoL.

I think it would taste just as awesome even with just 1/2 of a habanero, 1/2 a jalapeno, and 1/2 of a serrano. It would still have the same awesome flavor. The habanero has a smooth heat and flavor. I really like that pepper a lot. The salsa does not have to be about the heat, the flavor is equally important. If it is too hot to enjoy then what would be the point? :)

As much as I like hot though. I tried my hand at growing the Trinidad Scorpion and I met my match there. I could not eat a salsa that I made with even just one of those babies.

I recently bought a kitchenaid chopper.

I am not a fan of chopping them either. But I like to have them, no meal feels complete without them. So to me it is worth the work. Have you tried your chopper yet? It would be amazing if there is something that can chop as good as a person. It would save a heck of a lot of work.

Yeah, I agree, I think if you eat stuff often you kind of get immune to it.

I really don't like crazy hot, not enough to even try to go there. I like a kick, probably more than the average person but it's not worth blowing napalm out of your ass the next day and the cramps. Can't enjoy it.

Yeah, I use it a lot. And yeah, no - it kind of chops them either too finely or not symmetrically but I still use it. I don't skimp on things because I hate chopping them too.

That's cool. They will still taste the same and if it is easier to chop then heck yeah!

I make my own and a couple types at that.
One is just onions tomatoes sweet peppers and jalapenos along with cilantro all chopped up finally with the addition of some lime juice.

The other is basically the same only larger chunks with tomato sause added and just a tad of lime juice.
You can add what ever you want to either to tweek it. You do need to let it sit overnight in the frig at least 12 hours 24 is better.
