    The Insta Pot is convenient. High heat denatures nutrients. Low heat preserves them.

    Do you soak your beans overnight or for 24 hours, because if you do and then rinse them, you don't need to cook them for 8 hours, plus you eliminate the enzymes that make them hard to digest. The other benefit is that you use less energy to cook them.

    I don't soak them. I just wash them and toss them in. But I have tried it once. They are supposed to cook a lot faster like that. I guess, I can give it another go. Yu are right it would save energy. I will try it next time. Although I really like how they taste after they have cooked that long. It turns them a dark color and gives them a deep richness. Some people don't like that. Like my dad, he likes his beans cooked light and to be a light color. But I will give it another try and see how it goes, no harm in that. Thanks for the good advice.

    The darkening comes from caramelization of the natural and added sugars. You might be able to achieve it by decreasing the amount of water you are using and cooking them covered on really low heat for several hours (in the oven or a slow cooker).

    Even high on a crook pot isn't overly hot. A crock pot is designed to get you to the simmer point of ~210 F. A setting of high will get you there in 2-4 hours. A setting of low, in about 7-8 hours.

    I dont know how to cook. In addition I do not attract domestic types either. If I meet a two legger that can cook for just one day this will be what I have her cook. I cant stay interested in a woman more than a few days so I will probably throw her out when the beans are done but I wont go hungry.
