    When I make linguine with broccoli and garlic and toss the broccoli into the salted pasta water and turn the gas off. I let it sit for about 30 seconds just to break down the cell walls a little. It stays crunchy.

    I didn't even know that was possible. Does it raise the boiling point? I add salt because that's really your only chance to season the pasta. You can sprinkle salt on it afterward but it just isn't the same.

    Interesting.

    When the water is hotter, you can cook food faster. Salt also makes the food taste better.
    I always added it with seasoning the pasta in mind. It seasons the broccoli too.

    I salt both. Salt is not something I worry much about in terms of health.
