Yeah, I'm thinking sirloin. Nice and lean. The crushed tomato and beer make a sauce for the meat so dryness is not a concern. Maybe throw in a piece of veal or pork.

When I have the Wife make me meatloaf it is beef, lamb and pork.

Lamb, huh? I tried lamb in chili once and it was one of the very few batches I couldn't eat. Not sure what I did wrong. Or it could be that I just don;t like lamb.

I think so. It's been a long time though. The chili incident I remember clearly. I was in my mid 20s. I think I had I had it in my teens but I can't remember what I thought about it.
