I've eaten that around here. I forget the brand names. There are a couple and I saw them on sale. I have two high end supermarkets in this area that carry a lot of the organic meats.

I bought two thighs with the skin on. I figure I'll take one thigh's skin off and leave the other for some fat. I may use chicken stock instead of water if I see it on sale.

Ah, that makes sense especially if you're only cooking for one or two.

BTW, that's one inexpensive piece of meat. Granted, it's tough as nails but since it's going in the soup pot to sit for at least 3.5 hours it will be tender enough when it comes out.

Just me. I'll eat it for a dinner this weekend and then I'll have it for a couple lunches during the week.

Definitely. It will be delicious once it softens up.

Yeah, I'm heading out now to the bank and the grocery store. I think I'll add green beans and leeks.

I only eat them in soup. It just doesn't work for me as a side dish.

I like fresh, steamed green beans. Has an earthy flavor to them.
