Try kale or turnip greens instead of spinach. You'll be pleasantly surprised.

    Sausage and gravy (breakfast).

2lbs sweet sausage (or breakfast sausage)
    2 medium onions
    Gallon of milk (not low-fat)
    Salt, pepper
A little flour or biscuit mix
Biscuits (pop'n fresh, store bought, drop biscuits, whatever - or toast)

Fry the sausage and diced onions up until it starts to brown. Break it up well also, like ground meat. Salt and pepper to taste.

Don't drain the fat, once the sausage is well browned, add maybe 2 tablespoons of flour (or biscuit mix if you're making drop biscuits) and mix well. Add the milk next, enough to fill the pot up over the sausage - like a soup. You should be using a dutch oven or a deep pot if you haven't figured that out by now.

Now you have to stand there and stir often or it will burn. Keep the fire on medium high, the milk will start to thicken and once its gravy-like, you're done.

Take your biscuits or toast and ladle the sausage and gravy over it ($#@!-on-a-shingle style).

    It's out of this world.
Love that stuff, we called it SOS in the miltary though. I like to cook and it is the small things that make a difference. Take a pack of cheap dolla sto stuffing an add a can of bargain cream of chicken soup instead of water will bring out a great flavor for a better price. Same with some hamburgers, put in a can of cream of mushroom or chicken soup (do not add any water)with around a tablespoon of bacon grease if you are using chuck or round, a few minutes before done and you have a good meal. A cheap soup can be your friend if you let it be.

Good meals don't need to be expensive at all. I agree. Soups and stews allow you to create tasty dishes with relatively cheap cuts of meat and a bunch of root vegetables.

Healthy, warming in the winter, and filling too - a good way to keep the weight down for those of us who have to worry about it.

Yeah - $#@! on a shingle, on toast.

I'm kinda the same way, loved that Geoff Smith dude (Frugal Gourmet), I have most of his books. Great stuff.

Then they found him messing around with little kids and that all ended fast, but his recipes are fantastic. I think that sausage and gravy - I'm sure of it now, was one of his.

That's a good point. You can make them healthy and not lose any of the flavor.

I hear you. When I was an 11B enlisted scrub I ate the SoS and eggs every day, with lots of hot sauce on top! I loved that stuff.
