    I don't have a local butcher. I used to buy whatever was on sale but I have really cut back on buying meat from traditional grocery stores.

    OK so basically I could just choose whatever looks interesting. Maybe I'll go with a cut of sirloin and something else. I'll have to look around. I could get a piece of pork or veal too. I like to mix it a bit.

    Yeah, I'm thinking sirloin. Nice and lean. The crushed tomato and beer make a sauce for the meat so dryness is not a concern. Maybe throw in a piece of veal or pork.
