    I bought two thighs with the skin on. I figure I'll take one thigh's skin off and leave the other for some fat. I may use chicken stock instead of water if I see it on sale.

    BTW, that's one inexpensive piece of meat. Granted, it's tough as nails but since it's going in the soup pot to sit for at least 3.5 hours it will be tender enough when it comes out.
