Thread: Stewing Hen

    Stewing Hen

    Stewing Hen- I got it at the local farmers market. Stewing hens are worn out egg layers. So you have to cook them low heat for a good long time. I coated the bird with sea salt and pepper. Lined the slow cooker with rutabaga (in place of potatoes), celery, carrots, and red onion. 4 cups of chicken broth. I cup of water.

    In 8 hours I will let you know how it turns out.

    My wife makes them differently, she seasons the bird and places it in large pot with a steamer tray and steams it, after steaming so long she adds quartered potatoes and carrots and onions until the meat is almost falling off the bone.

    It was very good that way, I never had stewing hens your way though

    While I no longer eat meat, a good way to cook chicken is to "roast" it in a pressure cooker. The meat literally falls off the bones. Rutabaga is an interesting choice -- probably a very good choice. You'll probably like it very much.

    Dark meat (thighs, drums etc.) falls off the bone with minimal simmering. The breast takes much more time.
