    Rice Pudding

My wife loves rice pudding and I like it, Ive been making my own for years, using 1% milk and regular sugar. I make small batchs.

Im working on an Almond Milk, stevia rice pudding, ive tried 2 recipes and I didnt like them at all, not creamy enough and the rice was too firm.

I use Italian rice thats used for risotto in my rice pudding, its more expensive but we like it Arborio

If anyone has a good almond milk recipe for rice pudding post it plz I can always use stevia instead

I tried the Almond Milk you suggested. It is too thin. It tastes like flavor water to me. I do want a milk alternative.

I commend your efforts to make the healthiest Rice Pudding. But this may not work. One thought is can you make a slurry and thicken the almond milk? Add some vanilla for flavor?
I am tired of everyone fighting with each other. This is all by design.
