This sort of review of a meal is very rare for me so I felt the need to share. Now I'm trying to find sources of this type of pasta online so I can make it for myself. If necessary, I may make it from scratch.
Mmmm...I love pasta, but like you, I can't eat too much at lunch, mainly because I'll fall asleep if I do. LOL But, that looks good -- I'd leave the shrimp out - but I'd love to find a recipe.

How did the mint factor in? I like mint and I grow a handful of varieties, but I don't use it as much as I should. Adding mint almost seems to add a Lebanese flair.

Looks like you had a great lunch!

The mint seemed to blend with the flavor of the basil (I believe that they are related plants) and didn't jump out at me. If it had, I don't think I would have enjoyed it. I suspect that there is a great deal of overlap in Mediterranean cuisine as between the various countries.

Here is a recipe for basil mint pesto (I might reverse the quantities of the basil vs mint) but otherwise it sounds very good: https://www.foodnetwork.com/recipes/...recipe-1916785

I think that I would love it with scallops. Yum. I agree, sometimes less (sauce) is more. I love pesto.

Mmm...that looks good. I'm going to print it out. I agree about switching the basil and mint amounts.

    This could be good!!!

I used to like to toss the bay scallops with whole wheat pasta and garlic. It has been two years now since supermarkets around here have had them.

You could try sea scallops - they're a bit bigger, so the cook time would be a little longer.

They're a lot more expensive though. That's the thing. It's like buying quality steak.

You should treat yourself occasionally. You are cooking for one, so how many would you need? Buy some fresh pasta and and half a dozen scallops. Enjoy! You only live once.

That's true. Two or at most three would suffice.
