    There you go - much better. I used to buy scallops but hubby isn't allowed to eat them now. However he can eat shrimp, so I'm going to try to make that strozzapreti. So, I'm going to buy some 00 farina and make my own. I'll also buy the fresh basil, mint etc and make the pesto and get some jumbo shrimp. I can't wait. I'm off the week after Christmas, so I'll have the time.

    I prefer dried pasta to be honest. It's not a matter of better or worse. It's just a different product. That said, I have never heard of or seen
    strozzapreti in the shop as far as I know. I'd imagine it would be difficult to find outside of an Italian specialty store. Unless it goes by another name?

    Why would hubby be allowed to consume shrimp but not scallops?

    He's on dialysis. He can eat shrimp, but not most other seafood because they are too high in potassium, domoic acid and possibly phosphorous. A lot of shellfish are bottom feeders which makes them dicey for people with kidney issues.

    Strozzapreti are apparently an elongated form of cavatelli. I have a preference for fresh pasta. It just tastes different and has a different feel in your mouth.

    Cavatelli is doughy as hell but I do like cavatelli and broccoli. I haven't seen a whole grain version of it. Only refined and invariably frozen.

    That's why I don't think that the dried product would be similar in texture. It's that doughy chewiness that I enjoyed. Perhaps that's why I like gnocci.

    Yeah, I'm not sure how that would work with a dried product. That might be hard to pull off.
