    We fry eggplant in a little bit of olive oil and butter add just a bit of grated garlic to the oil then dip the sliced eggplant in a mixture flour egg and Parmesan cheese .cook to a light golden brown .we do the same with yellow squash and zucchini.

    I made eggplant to go with my steak on Sunday. Very good.
