    Roasting most vegetables concentrates the flavor, plus it creates caramelization on the surface of the vegetable.

    I'm a gravy guy. In the absence of gravy usually a small amount of butter, non-fat milk and hot sauce.

    I meant turkey or brown gravy but I use a lot of hot sauce too. Lately, I've been into Melinda's habanero sauce. I go through a bottle every 3 weeks or so.
