    French copper pennies

    6 cups cooked carrots (you can use canned, 3 cans)
    1/2 cup finely diced red onion
    1/2 cup finely chopped green pepper
    1/4 cup fat free (if you're calorie counting) French dressing
    1 T parsley flakes
    1 T brown sugar twin or regular brown sugar
    1/2 t prepared mustard

    In a large bowl combine carrots, onion, pepper.
    In a small bowl, combine dressing, parsley, brown sugar and mustard. Mix well to combine.
    Refrigerate for at least 30 minutes
    Gently stir again just before serving.

    Nice alternative way to fix carrots. And I've made it as low cal. of course you don't have to.

    Grilled carrots
    lb of fresh carrots peeled
    Parboil until slightly softened
    Drain and pat dry with a paper towel
    Prepare 1/4 cup olive oil, 2 tablespoons balsamic vinegar, and 1/2 teaspoon nutmeg, whisking together.
    pour in a large ziplock and add the carrots, make sure to thoroughly coat all
    Grill over medium heat.
    Yum!
