    We rarely eat eggs as my daughter doesn't care for them. But for some reason tonight she is up with it, so here we go!

    Can't say much. My mom and dad used to love peanut butter and tomato sandwiches. I could never eat that. Bleh.

    Couple of x-large eggs in a mixing bowl
    Big dollop of sour cream
    Splash of water
    Healthy dash of thyme
    Healthy dash of curry powder
    Salt

    Mix with a whip or an electric beater to get some air into the eggs

    Grill some finely chopped onion and jalapeno and green pepper in a skillet

    Then pour egg mixture into the pan and briefly stir everything together

    When the eggs are pretty much cooked put fresh grated cheese (we like Romano) over half

    Then fold the omelette over and let the cheese melt for a couple of minutes


    Serve with sour dough toast.

    I made mine with green peppers, onion, and Tabasco sauce. They were very good. Thanks to everyone for the ideas.
