The robber stabs the hero in the neck. Isn't that attempted murder? So, the old guy takes the knife away and stabs the bad guy 17 times. He is gonna get in trouble for that? What if he had only stabbed him 10 times? Or 5?
If someone stabs me in the neck with a knife, and I could get the knife away from him, knowing what he would do to me if he gets the knife back (attempt to kill me), I think I would stab the bad guy until he is no longer able to fight any more.
The presence of a deadly weapon in an armed robbery suggests they are willing to seriously injure, or kill, someone else. Isn't deadly force acceptable to stop an armed robber?
