    Flavour.

    It's a mixture of several spices. It has black and white peppercorns, cardamom, cumin, cinnamon, cloves, mace and some other spices.

    I always avoided chili, its got enough cholesterol to kill a mule. But a spanish friend of my wife gave her a recipe for turkey chili and the way she seasons the meat, it looks and tastes just like beef. I dont want it all the time but once in a while its ok

    Chili doesn't have to contain any meat at all. However, all of that excessive cholesterol comes from using fatty hamburger meat, which is not original to chili. Original chili was made with meat chopped to the size of a pecan. Any meat would do, even rattlesnake.
