I am experimenting as we speak. I had about 5 qts of cut up jalapenos, hot banana peppers and cayenne peppers in the fridge I was going to pickle, but since I already have a couple gallons pickled, I figure, hey let's give this a try. My house stinks to high heavens at the moment.

Meh, I'm getting old enough that I'm thinking preservatives can't hurt.

I have found that out the hard way with many things other than hot peppers. The worst was a super concentrated version of icy-hot for horses. My God I wanted to cut that thing off before it was over.

I shunned tobasco for a while but recently got a new appreciation for it. It's flavor is kind of subtle and it's heat is strong, but done right it's good. Like on eggs, something to offset the heat.

For straight up hot sauce I prefer Franks. I was buying it when it was the Durkee brand but to be honest, any store brand, most store brands, louisianna hot sauces work well too.

Then there's the mexican sauces which lean toward picante.

I never understood the whole macho "a bazillion..." whatever that hot sauce heat index thing is. It's like kids and beer, kids ruined the craft beer industry so that any "craft" beer out there tastes like battery acid - because bitter/hoppy is macho.

    $#@! that.
Agree. I like the flavor of Franks. It's not just hot. Hot by itself does nothing for me and if it's too hot, that's all you can taste - plus it's a blood pressure issue.

I was just having a discussion with my 14yr old about careers and that if I could go back and do it over again I think I would have been a vet instead of a CPA. And I probably would have learned that thing the hard way too, lol.

I think I would have become a professional landscaper, but should you ever get a very dark blue horse salve on your junk, just take my word for it and don't try to wash it off. It just spreads the flames like a california wildfire.
