    Homemade hot sauce

So with my chili pepper bonanza I decided one good way to use my pepper batch was to make some hot sauce. I tried a serrano/jalapeno sauce to start. It was actually pretty easy. Peppers, salt, vinegar....that's it. I used a mix of about 20 chilis. It's tasty but it's not particularly hot. I wonder if I should let it sit for a longer spell. I left it in the fridge for 3 days and then drained the solids. It's tasty and very bright, Spring flavor but its watery and it's just not hot.

    Anyone ever done this before?

We made hot sauce a loooooong time ago, didn't turn out great, more like a spicy tomato sauce. We used it for roasting hot sausage.

Hey D - let us know how it turns out.

Maybe your pepper s would make good pickled peppers since they are of a mild variety? Something to go on a sandwich or sausages.

Jimmy, I made chili too and used 5 serranos. The chili has a nice zip to it. I don't understand why the sauce isn't hot.

I'm going to try a different recipe soon. This one has a bright, Spring flavor. I thin I went a little overboard on the garlic because I can taste it for hours after eating this sauce but it's just not hot. Not sure what I did wrong. These serranos are rough. I can slice and eat jalapenos raw but these are too hot. Something about the process must have neutralized the heat.

Did you include the seeds into the hot sauce try?

I always use the seeds and veins. It's a sin not to.

Yeah, I was thinking the same thing. That's where the heat is and they can and should be strained out later.
