    I roasted a goose once. Took me 6 months to get all the grease out of the kitchen!!! I did all the steps you had to take but I probably should have steamed it outside since the steam carried the grease. I still ended up with more grease than goose when it was all done. So, now when we do cook at home (which is very seldom these days) its turkey. When I was a kid it was turkey for Thanksgiving and ham for Christmas (there was no way my mother wanted left over turkey for another month!!

    Speaking of soup, we make what we call "garbage soup". After every meal we put the left overs in a freezer bag and when it is full we throw it in a pot and add some chicken stock and viola we have soup made from the scraps that would have otherwise been garbage.

    One of my coworkers is 1st generation Italian. She always hosts Christmas Eve dinner for 30 people. Lots of fish and/or seafood and of course pasta. This year I believe she made salmon, shrimp, crab legs and mussels. She refuses to make baccala - it smells up the house, but someone else was bringing it.

    That's what I mean about getting a good goose. You don't want one that's been overfed so that it has a ton of fat. You want a skinnier goose. You would still have goose grease but only about 28 oz (like a peanut butter jar's worth). Then again, given that newer ovens have fans, it could still be a problem unless you roast the goose covered until you have removed most of the fat.

    We call it peasant food. Don't waste anything. Many leftovers can make a great soup or stew.
