    Tabasco celebrates 150 years with Champagne-style hot sauce ......

    How would you celebrate 150 years of hot sauce? With a reserve hot sauce in a Champagne-style bottle, of course.


    In honor of their century and a half in the hot sauce business, Tabasco’s McIlhenny family has released a premium, small-batch bottle of their peppery elixir. It comes in a black curvy bottle, and the cap is wrapped in gold foil.





    Tabasco Diamond Reserve is made, we’re told, from a selection of the finest tabasco peppers on Avery Island, Louisiana, and chosen for their perfect color, texture and flavor. The peppers are mashed with salt, then aged for up to 15 years and blended with sparkling white-wine vinegar.

    Avery Island is a cool place. Rumor is that Louisiana Army National Guard Soldiers brought Tabasco with them to the field. And it was a hit- and got incorporated into the MRE.

    I'd buy a case to stick in the pantry to sell in 25 years on Ebay for a big profit.

    I like it with eggs. But I wont pay 35 dollars for a 6 ounce bottle.

    Well, im not saying that the reserve has not been aged 15 years, but i find it hard to believe. It would have taken tremendous insight.

    First of all, only Tabasco seed peppers are grown at Avery Island. The best of the pepper plants are marked for seed production and the seeds are harvested and sent to central america for production and the peppers are then imported. The fruit from the pepper plants that dont make the cut go into mash production.

    The pepper mash is aged for three years in reused oak fired barrels, topped with salt.
    There are some neat videos on you tube.



    It' worth the trip just to see the Gardens. I try to go at least once a year.
