    Sometimes VEGANS get it so right.

    THIS is delicious:

    Bean and Artichoke Salad

    1 lg tomato, chopped(or 2 cups)
    1 red bell pepper chopped (1/2 cup)
    1 small red onion, chopped (1/2 cup)
    1 C chopped parsley or cilantro
    1 19 oz can red kidney beans, drained
    1 15 oz can chickpeas, drained
    1 14 oz can artichoke hearts, drained
    2 TBSP lemon juice
    2 TBSP balsamic vinegar
    1 1/2 tsp spicy brown mustard
    1 tsp dried basil
    1 tsp dried oregano
    1 tsp dried thyme
    1 minced garlic clove

    Sadly, I couldn't permit myself to eat the whole batch as I'm on carb alert.

    Sirloin steak topped with jalapenos for supper (not dinner, supper) and macaroni salad. Though the bean artichoke offering probably would be delicious.

    Think jalapenos would ruin it?

    Cilantro in small amounts is good. The salsa the ex made (and Mexicans know about salsa) contained cilantro. You see a salsa does not have to be hot (but it should be) to be good but should, in my opinion, have some other flavor besides just the peppers. The whole experience should be one of, "This is some great tasting salsa" followed in a few seconds by "oh crap my tongue is on fire"

    Bean salads are great. That's a bit much but as a runner I like to toss two or three varieties of beans with scallions, salt and olive oil.
