Hot Buttered Rum
(This makes a small batch you can keep in refrigerator.)
1 stick unsalted butter, softened
2 cups light brown sugar*
*To make your own brown sugar substitute, combine 1 cup Splenda with 1/4 cup sugar-free maple-flavored syrup. This can be used to replace 1 cup brown sugar in baking and cooking.
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
Pinch ground cloves
Bottle dark rum
Boiling water
In a bowl, cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt. Refrigerate until almost firm. Spoon about 2 tablespoons of the butter mixture into 12 small mugs. Pour about 3 ounces of rum into each mug (fill about half). Top with boiling water stir well, and serve immediately.

Low-carb Grog
Serves 1
Ingredients:
1 ounce rum
1 teaspoon brown sugar substitute*
1/8 teaspoon lime juice
Cinnamon stick
1 drop orange extract
Boiling water
Combine all ingredients, adding enough boiling water to fill mug. Serve.

Brandy Toddy
Serves 1
2 ounces brandy
1 teaspoon Splenda (or 1 packet)
Dash nutmeg
Lemon slice
Boiling water
Fill mug 2/3 full with boiling water. Add all other ingredients and stir.
.....spending holidays in Flagstaff, and will be needing a lot of these. :laugh:
