I thought it would be kind of cool to have a thread dedicated to healthy vegetarian food options and recipes and stuff like that. I think that I am the only vegetarian here but it doesn't mean that I can't introduce some of you to how great a vegetarian meal can actually be. So here are some pictures of some awesome looking plates and ideas that some of you may want to try one day. A lot of these i've made or will definitely be making in the near future:

cauliflower mash is amazing. It's like a food hack. Same goes for spaghetti squash in place of noodles.

I would eat all of that.

Most days I include a salad with at least dinner, sometimes lunch too. Lots of different stuff in it.

avocado with cucumber on toast is really good. It's also good if you just make a simple mashed avocado with tomato sandwich.

Kale chips! This is a staple at our house. More addicting than regular potato chips and much much healthier. Plus one kale or one one bag of chopped kale can make a ton of chips.

I eat vegetarian meals quite often. Today I had a can of beans for breakfast and lentil soup for lunch. Yeah, a tad Spartan...

Kale over pasta is a favorite.

I love avocados. I enjoy them plain with a little sea salt.

I also like a good veggie bacon, avocado, tomato sandwich. :)

I still haven't tried those. Code recommended them a while back.

The "roasted cauliflower, chick pea, and tomato with spices" looked good.

What do you do, just toss the veggies on a cooking sheet and bake?

One of my favorite vegetarian lunches (in fact, what I had for lunch today) is my spinach dip (affectionately dubbed Cat Barf by my son when he was about 3 years old) with raw veggie and bread or cracker dippers.

Cat Barf (Spinach Dip)

1 brick (8 oz) cream cheese, softened 2 hr at room temp
1 pint (16 oz) sour cream
1 box (2 envelopes) dry vegetable soup mix
1 bag (12 oz) frozen chopped spinach (thawed and liquid squeezed out)
1 can (either 2 or 4 oz) sliced black olives, drained
1 small jar chopped pimentos, drained

Blend cream cheese, sour cream and soup mix with mixer at low speed until well mixed. Add all other ingredients and mix well by hand. Cover and chill at least two hours and serve with a combination of any of the following:

Raw veggies
Bell pepper slices (red, yellow, orange, green)
Cauliflower florets
Broccoli florets
Radishes
Celery sticks
Baby carrots
Zucchini or cucumber slices
Thick-sliced fresh mushrooms
Grape tomatoes

Breads
Little cocktail breads - rye is very good
French bread baguettes, sliced about 1" thick, on the diagonal
Melba toast
Club crackers

I believe all you do is brush the kale with olive oil and season to preference. I was going to use some organic olive oil spray, and garlic salt.

Yes, you bake them in the oven. Not sure about temp.

Well On one of those days that weight and health are not in the front of your mind?

A great pastrami on Rye would give you your beef vegetarian

For that afternoon snack some turkey Jerky would be nice,

And finish of with some Pork Chops for dinner?

That gives you three vegetarians that I like very well.

Or is that not the type of vegetarians' for Lunch, Dinner and Snacks that we are talking about? :)

2 potatoes, cubed

1 fresh jalapeno pepper, seeded and sliced
3 tablespoons ground unsalted cashews



1 (4 ounce) can tomato sauce
2 teaspoons salt
1 1/2 tablespoons curry powder
1 cup frozen green peas
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 cup heavy cream
1 bunch fresh cilantro for garnish

See if you can substitute the vegetable oil with olive oil. Then so long as you eat it in small portions it is good for you.


This stuff is delicious. Not healthy, but tastes great and it's vegetarian.

We only use olive oil, but I think the cup of heavy cream is what makes it bad for you. We substituted Half and Half.

We also don't serve it over rice as the recipe suggests. Why would you want rice and potatoes?

Potatoes are much better for you than white rice anyway.

Heavy cream is bad in excess- too many calories. But it contains good essential fatty acids.
