Just enrolled. Thanks for your words of encouragement! I start in May!! So excited. I get to work with chefs who've won awards from the Food Network. Neat stuff!
They have a kind of "Top Gun" award board, and the Top award is the President's award, so I'll be shooting for that. My age actually is a plus, not a deterrent from what I've heard from chefs who didnt attend Culinary school until they they themselves were in their forties. They had the same thoughts and qualms when they started as well.
I get fitted for my chef whites next Monday. Might post a pic, might not. But, I will post pics of the creations there when I get the chance.
Anyway, thanks again for the kind thoughts!

Just the pastry arts.
I can cook up a storm and I'm great at it, but I don't have the ambition to be under a pressure cooker in that type of environment.
I'm much more passionate about breads and desserts and how they look, feel and taste.
Already obsessing about the capstone. We have to make a centerpiece out of chocolate, fondant or blown sugar. What do you think about a chandelier?

Risky - chandeliers are very delicate things when not made out of metal. Were you thinking of blown sugar?

Not my area really, but I do watch the Food Network competitions. Sugars are highly susceptible to temperature, so sometimes if the creation is too delicate and the temperature of the room is too high, they fall apart. You don't want to play it safe, but at the same time you don't want to go so risky that room temperature could be your total undoing. How artistic are you?

Depends on how motivated I am. I discussed this with several people and they said art majors aren't coming in to work with these mediums. Everyone I spoke with said it's really just a matter of learning and applying technique.
They assured me, dammit!

Could be perceived the wrong way. I was thinking blown sugar florals, but they would have to look real, or something ethereal or fantasy. For that kind of application I think that blown sugar applications look the most amazing.

And what does the word 'fail' even mean? I dont understand it.
