Made those wings. We didn't have the bottled wing sauce and since we're out in the middle of fucking nowhere I decided to mix my own. Had a half bottle of Franks in the cupboard and the whipmistress went into town to the cheese shop and dug up some margarine. So hot sauce, margarine, some garlic, lots of pepper, hunk o' blue cheese and that's that.

Everyone liked the mixed up version better than bottled but we used 2 sticks of margarine, might cut that back a little, it was just a tad greasy but pretty f
ucking good nonetheless.

Made a cucumber salad with onions, good seasons dressing (doctored up a bit) and garlic and man, what a dinner.

Go to CO's for real chicken and stay away from Popeyes. I will pay for the travel expenses.

But I will get you a coach seat in the back next to the head and I will be in first class.

I was surprised by how inexpensive the organic and humanely raised birds are. if it's local it's not pricey at all.

Any you guys are welcome to stop by for a weekend or whatever if you're in the area. Ohio Valley, Ohio River. I have a tent packed up in the camper, if you don't mind tent sleeping. My truck has a brandy new cap and bedliner if that works better also. It's sort of primitive but there are showers and facilities. Typical campground shit. I got woodstock and one thing is for sure we eat well. Made pork chops yesterday, they were fantastic. There's a fish market an hour up the road, we do shrimp and tuna also.

Invite is always open.

I was chatting with the whipmistress after dinner, figuring out the proportions. Half a bottle of Franks was too much sauce, I'm thinking a stick of margarine, third bottle of Franks and same size hunk o' blue cheese.

I look like a fucking retard eating wings also, I'm like licking the sauce out of the bowl.

I sometimes order or serve them dry and add a regular hot sauce. Love the dressing though.

Maybe a gouda cheese or limburger - which I know she'll veto immediately. The cheese shop sells a pretty good limburger and I always have some in the fridge but she... tolerates it at best. Cuts it up for me, but that costs me.

Cheese adds a certain thickness to the sauce that sticks to the wings. Man... the fucking possibilities are endless.

Dry rub is good, but only if it's got something else like parma cheese or something crispy like that. Or fresh herbs.

I have this recipe, made it a couple times from that guy - Frugal Gourmet, Geoff Smith I think his name was. The original cooking show guy. Had some thing with messing around with little boys or something, can't remember but we bought a few of his books. He knew how to cook, that's for sure. A lot of my cooking skills came from him.

Anyway, the recipe was a whole roasting chicken. Stuff it full of garlic, peels and all. Salt, pepper, butter, roast it typically, take the garlic (peels and all, they've softened) and spread it over bread.

It's really good.

Don’t know if you’ve tried this, but my wife does it for me and the American next door. Fillet of chicken, sliced and the inside filled with cheese, deep fried in bread crumbs. Very tasty; quick and easy to make and chicken here is very cheap. (Similar to this). Is it popular in the U.S?

It takes pretty much all day to make my wings. I finish them two different ways.

Wing basics:

I throw them in a brine boil with 2 tbsp of salt, 5 tbsps of vinegar, 2 tbsps of black pepper, 1 tbsp red pepper, and 1tbs sugar. I let them boil for about 20 minutes to soften and soak the meat and then I put them on the smoker. I use applewood or hicory. I leave them on for about 4-6 hours on low setting. I'm not trying to cook them as much as make sure they're smokey all the way through.

Once they're cooked and have turned brown from the smoke I go my two various routes.

Crispy wings:

I throw them in the deep fryer for 2 minutes just to crisp them, and then I put them in a bowl with Old Bay seasoning.

Buffalo Style wings:

I mix melted butter, sage, chipotle hot sauce (I use lots of this) , and 2 tbs sugar in a bowl. Sometimes I will use Buffalo sauce I buy from Buffalo Wild Wings. I toss the wings into this mix and then move them onto a gas grill where the sauce chars onto them a little bit.

Which is why I save it for a party or special occasion. If I want quick buffalo wings I do the deep fryer approach and then throw them in sauce. But if you have the time the end up out of this world.

I notice you use Franks. That's pretty good too.

I like Franks, a lot. I was using it decades ago when it was sold under the Durkee brand.

It has flavor and it's hot enough. I don't like stupid hot and flavor is important.

I like Sriracha in this sense also.
