Yeah, but I was really drunk one time a long time ago and went to an all nigher diner and ordered this huge plate of fries, dumped a whole bottle of hot sauce on them and even drank the "gravy" after downing that plate of fries.

The hangover the next day was... special. Since then I have a hard time with hot sauce and fries.

When I was in Bama we were eating fried catfish and okra like nobody's business. Everybody served it.

And everyone served that sweet tea which I think is disgusting. Hard to find a place that served beer though.

Olive oil is good. Millions of Italians, Greeks and Lebanese can't be wrong. I use it too, but not for anything that needs higher heat or where I don't want the olive oil flavor transfer. For example, I would never use it for a Chinese stir fry.

I go full on decadent when it comes to fried eggs. I like them fried in butter. As a result, I don't often eat fried eggs, but when I do, I thoroughly enjoy them. I've tried olive oil, but it's just not the same. They taste olivey (sp)!

Ah, eggs fried in bacon grease. I won't do scrambled that way, but sunny side up I love in bacon fat. Serious guilt factor afterward, but it's worth it.

I dump most of it out. Just enough so the eggs don't stick.

I do too, but have you ever had your sunny side up eggs cooked with the hot bacon grease poured over the eggs while they are cooking? It just congeals the top of the egg. It's so good, but so bad for you. I haven't had them that way for several years, but I still remember the flavor! Why does everything that's bad for you taste so good? It's really unfair.

My mother used to save it back in the day. Funny, but no one in my family was ever fat or had high cholesterol issues. Cool. I'd rather have it ready to use. now that I think about it, when I worked at a deli in college the owner would just leave cooked bacon out for days. Cooked and cured it's fine without refrigeration.

Animal fats are good for you (in moderation- defined by your activity level) and vegetable fats are best avoided.

I always use bacon grease to make a roux for gumbos. Its just not the same using any other oil. I fry eggs by splashing the hot grease over the yolks. We don't have them often so its a treat for when we are feeling dangerous (!)

It's a texture thing Pete. Under cooked whites have a very snotty feel in the mouth. All things being equal, even if the eggs could be eaten raw, I prefer the whites to be cooked.

I'm not kidding you or myself when say the difference is minimal. It's some porky goodness.
I haven't seen any, but if I do I'll try it. It looks good.

Pork is common to many European cultures, so given the cultural mix in the north, it would be unusual if it weren't pretty common in the north as well.

LOL. Especially in Germany. German (German themed) restaurant menus are probably 80% pork dishes, at least in Munich. After coming back it took a couple of weeks before I wanted to eat pork again. Of course I was sick when I came back, so I wan't eating much of anything anyway, but I really wasn't interested in eating anything remotely like pork schnitzel.

I've never tried pork schnitzel but I looked up the recipe and it looks good....just fried pork chops, pounded thin. Another thing to try! I get tired of cooking & eating the same thing prepared the same way. Good thing my husband is adventurous!

Un Spain pork is very popular too. From steaks to different kinds of sausages from pork like fuet, sobrassada, chorizo...

You can also do the same thing with chicken. Add a little marinara sauce and mozzarella or Parmesan cheese on top and bingo you have chicken parmigiana.

I've made that....until recently we could not get veal in this area so I used chicken breasts, pounded thin. I love Italian food but I'm a novice so I stick to the recipes rather than try my own versions. I did figure out that chicken could be used instead of veal for picata, etc.
