@Dark Mistress (http://thepoliticalforums.com/member.php?u=1083) - Thanx! you were not kidding! They are good. Tonight was my first try and I should have made more than 4 of 'em. Husband loved them too. We had pupusas & chicken enchiladas....salsa over everything!

Husband says they go really good with cold beer. Of course, he thinks fudge goes well with beer too.

This is the recipe I used if anyone else wants to try them. I used leftover pinto beans with little pieces of ham in them.

5 cups masa harina flour
4 cups water, approximately
16 -24 ounces canned refried beans
3 cups soft white cheese
light vegetable oil or light olive oil

Directions:

In a large mixing bowl, gradually stir water into masa harina until dough forms a ball that can be handled.

Into another bowl, empty the refried beans. Place the grated cheese into a separate bowl.

Divide dough into about 25 pieces. Roll each into a ball and flatten between the palms of your hands to about 1/2-inch thick. Put a spoonful of beans and a small handful of cheese into the center of each pupusa. Flatten again with the filling inside.

Heat a heavy, wide-bottomed or flat skillet until hot. Brush with oil and cook pupusas on each side 4-5 minutes until a pale golden-brown. The outside should be firm.

no...I used jack & cheddar mixed...I cheated and bought a bag of shredded cheese. Getting lazy....

I know...but every time I do it I hear my mother (sitting on my shoulder) saying "I can't believe you paid extra just so you didn't have to grate it yourself" Guilt gets me every time!

Unless you want to get special cheese, pre-shredded is the same. Which I have done for certain dishes.

sounds good....I love soup in the winter. I made about 5 gallons last week and froze the leftovers. I have never figured out how to make a small pot of soup or a small pot of gumbo. The stuff just grows....

I second that. I have jars and gallon zip lock bags in my freezer full of soup. I got adventurous this year and canned some to put on the shelf. However I learned a valuable lesson. Never pressure can chicken noodle soup with the noodles in it! It turns them to mush. Can everything but and do them fresh when you eat unless you wanna save yourself on some carbs.

I have to buy block cheese. Because we need sliced cheese so much for my children who eat it like that. I have also found that cheese melts on pizza better when it's grated at home and not pre shredded. Dunno why but it does. We have pizza every Fri night.

You can add diced tomatoes, but that is too acidic for me. Acid reflux sucks.

If the kids like pizzas, I have a trick I used for mine. No one likes the same things on their pizza. I have never been good at making a pizza crust either. I use flour tortillas...bottled marina sauce and let the kids put whatever on that...peppers, onions, mushrooms, pepperoni, sausage, etc. I precook the sausage and saute the veggies so they are semi cooked. Sprinkle with cheese and put on a backing sheet in the oven...or outside on the grill in the summer. Individual pizzas! My bunch loved them....they would roll them up and eat like burritos!

that looks like the recipe I use for split pea soup...except I use a ham bone...all good southern cooks have a ham bone in the freezer!

I love split pea soup. There was none at the store today. Something must be up with the peas. So lentils tomorrow, but I am hunting for the peas.....

I think I could live on soups....husband will eat them if I make cornbread but he's not as fond of soup as I am.

When I went to the store for the cheese today, I was attacked by a Bavarian crème filled King cake. I was not able to fight my way free and was forced to bring it home. I had to make a cup of coffee so it would not feel lonesome. poor me.

Don't know about the stores around your region, but I can buy raw pizza dough either fresh or frozen.

Yes! We have done this. Those little snobs like store bought pizza and take out better. I still make mine from scratch most weekends though. I have a simple, but good crust that doesn't have to rest, just has to rest for 15 minutes. I play with my flours- I keep all purp, whole wheat, whole white wheat, spelt, oat, rice and millet flour on hand. I like to mix it up and use different flours. I have done a gluten free that is very tasty but it requires cooking spray or else it sticks to the pan. I also make a pan crust that you put liberal amounts of oil in deep dish pans. Super tasty but requires a lot of time to rise.

Ever since Mr. Freeze and Ethereal started debating New York vs Chicago crust I have wanted to give those a go. I found some recipes and golly some of them take 24+ hours to make! Maybe when it's summer and I have more time. I am too busy to do time intensive recipes right now. I lazed around all day and then decided in the span of a few hours to make no bake cookies, peanut butter cups, quiche and pumpkin pie. So, we had dinner for tonight and breakfast in the morning for when we are crunched on time to get all of us to 9 o clock church- shifting from 11 am from last year. We need fast breakfast and I am sick, sick, sick of cereal! Eggs take too long on Sunday mornings.

Another spin on tortilla pizzas that I had growing up. Instead of marinara sauce, salsa. We used salsa for the sauce and did traditional cheese and toppings. Those are quite tasty too!

Don't know about the stores around your region, but I can buy raw pizza dough either fresh or frozen.

We have fresh at our store- both white dough and wheat dough. I love the wheat when I am pressed for time. It's cheap, but I am the uber cheapskate who argues that I can make it for less! It is terribly convenient though!

I've made it myself many times, but it does slow down the process.
