The Meatball Recipe to Conquer All Others.

In any case, making a tender meatball relies on a few basic principles: First there's ratio, and about 20 percent of the meat mix should be fat. In my restaurant — and this is a huge benefit of being a pizzeria — I can grind the end nubs of cured meats like prosciutto or sopressata to get fat and flavor at the same time. But at home, I use pancetta or nice smoky bacon. Quality matters because during the low, slow oven cooking, the fat flows out of the meatballs and goes right into the tomato sauce.
Then there's shape, and here you want to make sure to get all the air out as you form the meatball. For that I use an old-fashioned trigger ice-cream scoop. Firmly pack the meat into the scoop, pressing down on the flat side with your palm. Then use the spring trigger to release it, and roll it between your flattened palms into a ball. Of course, in between the mix and the shaping comes the filler, added for texture and to help retain shape. I go really easy — bread crumbs, salt, and pepper. A meatball should taste like meat.
•Meat mix: 1 lb ground beef (80 percent lean/20 percent fat), 1 lb ground pork, 1 lb ground veal
•1 lb pancetta or thick-sliced smoky bacon, finely minced
•2 whole eggs
•⅓ cup finely grated Parmigiano-Reggiano
•½ cup finely diced yellow onion
•8 garlic cloves, minced
•Herb mix: ¼ cup finely chopped flat-leaf parsley, 2 tbsp chopped oregano, 2 tbsp chopped rosemary
Combine above ingredients and mix well, kneading the mixture with your hands like dough.
•⅓ cup fine, dry unseasoned bread crumbs
•about 4 oz (½ cup) whole milk
•about 1 tsp coarse salt
•about 1 ½ tsp ground black pepper
Slowly add milk to bread crumbs, stirring until the mixture has the consistency of wet sand. Immediately add to the meat mixture, season with the salt and pepper, and mix well. To taste for seasoning: Heat a small amount of canola oil in a small pan. When it's hot — it will ripple in the pan — pinch off a bit of meat and fry in the oil. Remove with a spoon, taste, and correct seasoning, adding more salt if necessary. Refrigerate the meat mixture for about 30 minutes.

Preheat oven to 350 degrees. Shape meatballs, preferably using an ice-cream scoop (see introduction). In a large skillet, heat about a quarter-inch canola oil until very hot. Working in batches, brown all sides of each meatball.
As they finish, transfer browned meatballs to a deep, ovenproof casserole. Cover meatballs with tomato sauce. (Don't skimp — they must be totally submerged.) Place in oven and bake until well done, about 1 ¾ to 2 hours. When done, they should feel firm to the touch, or an instant-read meat thermometer should read 160 degrees.
To serve: Spoon sauce over meatballs (2 or 3 per person), top with grated cheese, and pass crusty bread. Makes 25 to 30 meatballs. Serves 8 to 10 as an entrée, with leftovers.

Well D signed off.....I gotta remembers he can't listen to half those videos. I didnt know they had finally released Dre's new Album. It wasn't up 2 weeks ago. Althought for the last couple weeks I havent listened to any Music. Havent been in the mood.
Plus I have been running back and forth non-stop to the Hospital then the County Jail. Then to my Moms house. Now they have put my mom in like a Nursing Home. Because she is not strong enough to stay home alone. Someone has to be with her 24/7 at least for a couple weeks the Doctors said. Don't look like my Aunt will be able to come up. The weather is Changing and we will go into Winter Mode. Already Temps have been as low as 42 degrees at nite. So it will be cold azz rain and winds.
Tomorrow I have to go and see my son and drop him off some Money. We want to have our first visit with him. So I will probably come home and crash out. Instead of jump on here. Have to do a lot of running tomorrow. Might be able to get on here later at nite. If not then Sunday Morning.

He likely spent the night on the ottoman in the living room after his midnight to 1AM jog around the house. >:( Yeah, we have plenty of bumps in the night here but it's usually him!

My first night in my new house was a little creepy and I guess that's normal. You don't know the sounds the house makes and I was alone. My roommate was still at the old apartment. Anyway, I put all my empty beer cans in the sink and in the middle of the night I heard the sound of beer cans being kicked around. It took a moment to realize the cat probably got in the sink. He had been exploring the house. Freaked me out pretty good though.

Well.....I was just given some more bad news. We just lost the contract bid for the papers. Looks like I got 2 weeks and I am out of a Job. I needed this shit like I need another hole in my head. There was just no way we could have bidded any lower. Guess it was getting to that time anyways.
This mean I will be losing the puter they gave me to run around with. Althought I have one at home. It's like D's in being Old. No more having to run out to the warehouse in the middle of the night. That will take getting use to again.
Plus now the Tribune is printing for the Sun-Times.....so they will be the only truck that will be delivering from now on. Soon they will start printing for the Post Tribune who the Sun-Times owns. So now people who take this type of job. Will have to wait until 3:30 - 4 am to get the papers delivered to the warehouse. Thats not counting any mishaps and or weather conditions. Means people will not be getting out onto their routes until 4:30 or 5 am. Barring no mishaps. Already the print industry takes advantage of all those who deliver for them. Plus now they will do this.
It will force people to only take one or two very small routes. No more peeps having 3 and 4 routes. Tonight we are letting them all know we will not have the contract anymore. Some have been on their routes for like 10 and 12 years. They may be able to talk to their customers concerning the new time factor. Otherwise the Newspapers win out. For if they cannot deliver their route by 6 am during the week. They will be terminated. The papers only want to pay out so much for 1 route.
Here will be another industry destroyed by technology. More people will be out of work. It's always been a part time job and one which Seniors use to all be involved in off-setting that social security that they get which doesnt give many enough to pay their bills. The type of job that any person could get if they were willing to put up with no benefits, 7 days a week, low paying job that docks them and takes money away all due to customer service.
This industry when I was growing up had kids working the job. Then they changed it to all adults. More and more they have reduced it due to the Net. Driver carriers. Using their own vehicles and their own gas. Stopping and going wear and tear on their vehicles. This is what it is like. The type of job that anyone can get. Even if they cannot get other type of work. So thus it begins. Even the loss of shit-jobs in this country. >:(

Out Completely! One part of me is like yeeeeeaaaaaah no more shit weather and smart azz customers to put up with. Then the other part is like. What are you going to do now. The ole lady was like I should go for disability. <thud> :o She thinks they will give it to me due to injuries to my spine.
Just getting use to being set out to pasture. Be different if I was rich or something. Guess it will allow me to get things done around here before full winter sets in. Last nite we were done to 38 degrees and the night before 35. This week they say we will be around the mid to low 70s during the day.

If you have physical issues then there's nothing wrong with applying for disability. You're not being put out to pasture if everyone is being let go!
I think for your health a break could be good and I know a lot of studies have shown that working nights hurts your health as well. So think of it as a little break and now you'll have more time to get that other stuff done.

Were okay and able to get by.....if something was to happen to me my wife will be taken care of.....if something was to happen to my wife. Now that would be a different story. She is the one with the jobs. As a Teacher she makes okay money but nothing great.
Her son will have college this year and next at Purdue. But he lives here with us. My oldest I have given 8 weeks to come up with the money for his own place or he is out either way. Hasn't said much to me since I gave the ultimatum.

My step son is not on Campus in Lafyette.....he goes to one of their off Campus Schools In Hammond Ind. So it's like a Community College. After this year and next he will be done with all the cooking classes he can take. But your right his friends are here althought they did want him to go and try out for the Purdue Football Team. (thats how big he is.....like 6"4 280-290lbs) He wasn't into football anyways. Hurt his knees in High School. Plus they would have had him put weight on and he is about losing his.

He is a really good kid.....even tho he is not my own he is treated just as he is. I have raised him since he was 6. Same age as my oldest just a couple months younger. My oldest is like 5"9 and about 170lbs. My youngest is 19 and 5'8 bout 160lbs soak and wet.
He has a relationship with his father. Who actually moved down here by him. Not to far away. Like only 15 mins. Just so that he could be part of his life and raise him to. No divorce war between my wife and her ex. Unlike mine which was a prelude to Judgement Day.
But we are close to. At least with him I know he cares about us and the family. With my own.....it's a different story.

That's what I did. I was at county for about 2 years. Then I switched to Rutgers.

I'll need to grab more herbal tea (which isn't really tea, BTW). That always helps. I'll probably eat soup a few time4s a week after my workouts too. On the other hand, cold beer doesn't help.

I'm not turning the heat on until it really gets cold. Probably in a 4 or 5 weeks. The I keep it at 60. It always takes me time to adjust every season. My first few runs in 85 degree weather are always a bitch. After that I'm like a champion! 8)

I much prefer the heat over the cold - I've gotten soft living here in SoCal.
But it doesn't really get cold here so I don't mind fall and winter. Now if I lived in Chitown I would not be looking forward to that winter. Here winter just means rain and I like the rain. Also we always need the water.

They said every 21 days.....so at least another 16 dys before the second one. Its when she goes home thats when things will get more difficult. Ive already told my wife that such will require us taking what time we have that is free to go and check on my mother. Take care of thing she needs.

:D Listen all you Mofos, a MFA is a muffuggin Master of Fine Arts degree. It's basically a way to steal money from stupid rich people who think they will end up writing the great American novel or the next big screenplay for a movie. Yep I like it warm.....like the Samurai of old use to drink it. Especially during winter. Warms ya right up. 15% too. It's one of the strongest wines made. I like the real version. I have an actual Japanese restaurant Down the Street from me, and they sell both versions here in the US. Plus some others from around the US. I like Sake too but only Hot! ;)

Hot totties are the only hot drink I've had. Saki sounds kind of nice in this weather. I may look into that.

Never liked it much myself but with Japanese food or in a restaurant it's cool (when in Rome kind of deal). I like an Irish coffee too.

I've never had it. It might be a good idea to try it first somewhere. Maybe I know someone with a bottle at home. I tried that single malt Laphroig at work. ;D My buddy brought a sample in a flask. We sat in his Expedition at 11AM for a taste test. :D

MMC it is important you see this...it has nothing to do with you much less anything you said. I sit here in front of the computer, my gal shows up, I leave the computer (on) and go into the other room with her to watch tv or talk about the day or whatever. Then I forget about leaving the computer on and I come back in here and shut it down. I don't ever log out because I'm the only one using this computer, so there's not much point. I will try to be better about punching out too.
It's not so bad being on here when it's slow, post some threads and people will reply to them once they get here, and don't take it personally if it doesn't happen immediately.

The latest Charmin ad campaign is great. It has the cartoon bears and the baby bear always has dingle berries. :D I don't know who thought that would be cute but it is hilarious. The first commercial was the best It has the baby bear snap the football to someone and when he assumes the center position all the QB can see are a bunch of dingle berries. :o :D

If ya subscribed to a thread then you should be able to go to setting page and see all the threads you subscrbed to. That lets you know if you have responded to that thread or where ya left ya post in that thread.

No, just because of family bullcrap, and now my OL wanting to have this all these people over to our house. I hate that social stuff...I'm not happy with the forum change but if you say it's an improvement then I'm sure there are benefits. Like you said I'll get used to it and I don't want to seem ungrateful for the work that's been put in. Mostly it's the OL having a dinner party and she can't cook for squat. Oh, and my mouse is broken and the Check Engine light came on. I forgot about that last one. Anyhow, I'm drinking tonight and I'll deal with the car tomorrow.

Oh yeah, I don't mean to be ungrateful. I'm sure eventually I'll figure this out. You guys from PH have a leg up. The problem with having a dinner party two days after Thanksgiving is that we just did a big cook and the fridge is full of stuff, and well I could go on and on but like I said in the PM, it's a great day for the forum so I'll quit my bitching and enjoy it. It's good to be among friends :)
