    Okayu, Congee, Rice Porridge

    I thought I would share a very simple recipe, you might already know it, it is rice porridge. You can basically doctor it up any way you like. It is good just plain. You can also dress it like oatmeal and make it sweet. You can also add vegetables and make it into a stew with meat if you want to. It is a simple recipe. The ingredients are rice, water, and salt. Today I made some, I topped mine with raw onions and a little bit of chili oil. There really are no rules.

    Ingredients:
    1 cup of short grain white rice (any kind) I prefer jasmine or pearl rice
    1/2 tsp salt or less
    7 cups water

    Directions:
    I bring my water to boil in my electric kettle, it just makes it faster. Wash rice three times to remove starch. Put 1 cup of rice in the pan, add the 7 cups of water, bring to a boil. Then lower the heat to low and partially cover with a lid for about 40 minutes. Stir occasionally to make sure it is not sticking especially towards the end. That is it, you got rice porridge.

    If you already happen to have some rice that is cooked. You can use the cooked rice. Use the same ratio, but cook for 1/2 the time. Here is a link to the calorie content. https://recipes.sparkpeople.com/reci...recipe=1119396

    Get an instapot, it makes rice wonderfully, perfectly.

    Big fan of instapot and I like jasmine for everyday rice. Lower in carbs. Nothing like the smell of cooked rice too.

    Put an egg or two in there too, during the cooking process.

    The egg is a great idea. I have never used a rice cooker or Instapot. But I did buy my mother an Instapot, and bought my father a rice cooker, LoL. I have debated buying myself one, but can't bring myself to do it. It is really easy to cook rice. I feel like it kind of cooks itself. I just prepare it and then set the timer it comes out perfect every time.

    Jasmine rice is so good, I think my favorite is Basmati.

    Get an instapot, it's like a hundred bucks. It will change your life, trust me on that.

    Meats in less than 10 minutes, tender and perfect. I cooked 6lbs of frozen chicken breasts in it just the other day, it took 54 minutes but perfect. Best way to make rice too.

    You'll thank me for buying one too.

    The Instapot sounds pretty awesome. I have really thought of buying myself one. But, it is easier for me to buy something like that for someone else than for myself. I can cook most things pretty easily, so I just hold back. But perhaps one day I will break down and buy one for myself, maybe. But it does sound great. I watched a lot of vids on people cooking with them, that is why I bought my mother one. She loves it.

    I mean 6lbs of chicken breasts in under an hour is impressive. I put about the same amount of chicken breasts in the crock pot for the old man last week, it took about 6 hours for them to cook to perfection. So yeah I can see the benefits.

    The Wife uses the instapot a lot. Rice, pasta, and mashed potatoes do come out better in it. At least I think so.
