I made green gazpacho last night. Very good. Extremely easy to make if you have a quality blender.

    • Blend cucumbers, zucchini, onion, olive oil, basil leaves, and lemon juice together in a blender until smooth; add cream, salt, and pepper and pulse until smooth.
    • Refrigerate soup until chilled, at least 1 hour.

It is basically a cold soup. The Euros eat it a lot in the summer because many people still don't have AC there. There are many ways to make it. The most popular is tomato based.

If you have a good blender and space in the fridge, it is extremely easy to make.

I went to a farmers market today and got some locally produced beefsteak tomatoes , I plan on roasting them after pealing with some Italian seasoning shallots balsamic vinegar garlic and a sprinkle of sugar and some jalapeno peppers chopped add some olive oil for a base.

ill add vegetable broth made from onions and green sweet peppers celery and carrots and a bit of sun dried tomatoes and sweet onions and a bit of basil . I will strain it add the liquid to the roasted tomatoes and mix then chill
I will top off the mixture with some scallions and cucumber slice paper thin , maybe add a dollop of sour cream.

Ill save the strained veggies to make chicken soup or vegetable soup along with a bit of broth.

thanks peter for turning me on to it ,I think ill try the tomato then others but I love tomato based anything.

I will probably try it cold and hot maybe with some fresh baked sour dough bread or a flat bread

o peter I told the better half about it and she was excited about it, shes very health eating type 70 percent of the time.

I do most of the cooking shes got a small business . I don't work but keep busy she enjoys work but hasn't got a lot of time for home choirs so take sure we have time for fun . we do have one of her staff come in every 2 weeks to help clean.
