    SImple Eating

    I'm pretty easy to please with food.

    Today I went to the local farmers' market.

    For dinner tonight, I will be having:
    • A sliced turkey sandwich with a big ol' slice of homegrown tomato.
    • Cucumber and onion salad (Sliced cucumbers and onions in equal parts vinegar and water, with sugar to counter the tartness of the vinegar). Let set for several hours and yummy!
    • Apple turnover for dessert.

    I will be as happy as can be!

    Anyone else like simple meals?

    I pretty much like any meal, simple, or not. Lol. But yes, we mostly eat simple.

    I soak my cukes in vinegar and salt, draining them frequently. Never thought of the sugar, will have to try that. My wife goes for simple meals, stuffed peppers, chopped steak, chicken and rice. I have delusions of grandeur when I cook and make these elaborate meals like Coc Au Vin, Steak Au Poivre, Shrimp with Artichoke Hearts in Yellow Curry, Fillet of Sole Grappa. The odd thing is 100% of my wife's meals are very tasty and edible. About half of mine the dog won't even touch!

    Simple? I'll put ketchup on bologna in between two pieces of bread and be happy.

    Maybe that's why the wife won't let me cook.

    I like making sandwiches out of leftovers. Tomorrow I'm having Roast beef, roasted red peppers, fresh mozzarella, Avocado with Ahji sauce on a nice crusty roll. And the next night Fried eggplant, fresh mozzarella, roasted sausage, peppers, onions and garlic with saffron mayonnaise.

    We love simple meals.

    Tonight I seared a good steak, cut it into small pieces and warmed it in butter. Then I made a green salad, added tomatoes and feta cheese. We had the steak over the salad. Delicious.

    On days when I don't have fresh vegetables I use frozen vegetable mixes and make soup. The base is either broth or Hatch tomatoes and green chiles (same as Rotel but I like the Hatch brand better). Let it simmer and add a little cheese and crusty bread.

    Our meals are always simple and quick and we eat every vegetable except brussel sprouts (hubs doesn't like those). I am a master of soups. Anything from homemade cream of mushroom to a hearty chuck roast beef vegetable soup to chili. We don't always have soup, but we have it at least twice a week.
