    All Things Casserole

    Had to post this.

    Nutria Seafood Surprise Casserole What's the Surprise you ask? There is no Nutria.

    I cut this recipe in half and it still made a nice 9 X 13 Dish. Actually this is really called Low Country Seafood Casserole.

    3/4 cup butter or margarine
    3/4 plus 1T of flour
    3 cups half and half
    2 cups shredded sharp cheddar cheese
    1 1/2 t salt
    1/2 t red pepper
    1 small onion, grated
    3/4 cup sherry
    2 lbs medium shrimp, cooked, peeled, deveined
    1 lb scallops
    1 lb lump crabmeat, drained and flaked
    2 14 oz cans of artichoke hearts, drained and quartered
    2 8oz cans of sliced water chestnuts, drained
    1/2 cup sliced almonds
    1/2 cup grated parmesan cheese

    Melt butter in a ditch..LOLOLOL DUTCH OVEN, over low heat, add flour, stirring till smooth. Cook one minute stirring constantly. (Guess i'm still thinking about being dragged along on @HawkTheSlayer's Gator hunts in the Lou-ze-anna Swomp)
    Gradually add half and half, cook over medium heat, stirring constantly till thickened,
    Add cheddar cheese, salt, pepper, stirring till cheese melts.
    Stir in onions and sherry.

    Arrange shrimp, scallops, crab, artichokes, water chestnuts in lightly greated 3 1/2 qt shallow casserole.
    Pour sauce over seafood and vegetables, sprinkle with almonds and parmesan.

    Bake 350 degrees for 35 minutes or until lightly browned.

    Yield 8 to 10 servings.

    I served with rice and corn on the cob.

    What time is dinner? I'm on my way. But you really should reconsider having two starches!

    One of the very few things my mom made that was good was tuna noodle casserole. I had the ingredient list and directions but lost it long ago.

    But I could probably recreate it easily enough. And I would use better ingredients.

    By the way, did you know that Gallo has developed a wine specifically for men with prostate problems? Its called a Pinot Moor.

    And I guarantee it would not taste the same. My mother made a spaghetti sauce with meatballs that was to die for. It was really quite simple. Two cans of Hunts tomato sauce, two cans of Hunts tomato paste, a little garlic, some olive oil, a dash of sugar, and a bayleaf. The meatballs were ground beef with Italian cheese, breadcrumbs. garlic olive oil. They were then squished through her fingers until they became like paste. Formed into ball they were then browned in more olive oil and plopped down in the sauce where they simmered for several hours.

    I was never able to replicate the taste of the meatballs or the sauce. I think the oils on her fingers when she was squishing them is what added the flavor!
