    Ok im going to whine a bit about a pet pev

    Making booze . distilling your own is illegal in all but a couple states .
    my family made moon shine for who know how many decades maybe a few hundred years truth be told.
    and im not talking rot gut . Im talking about some fine corn based and fruit based and rye and even some barley .

    you can make some really good rye shine then age in in a barrel and turn out some fine booze or get a used wine barrel worked great.
    you should be able to make so much a year for your own use and age so much.say a total of 30 gallons or so maybe 48 that allows to to put 24 or so in barrels and have plenty to use a 1/2 gallon a week is not unreasonable .

    I really have nothing relevant to say here..............but.............one thing...........I have cooked my own meals for years. But if I want an adult beverage.......someone else must cook it for me. Period. That's where I draw the line for cooking my own stuff.

    Ive been making wine for decades. You have to make a lot because of the age requirements. Fruit wines(reductive wines) finish and age much faster than oxidative wines.
    Never made shine. But I have made an assortment of killer mashes I've passed along.

    I agree. I would love to distill. I have brewed beer quite a bit. That's okay but why not hard liquor? Because of taxes. It's taxed higher than beer and wine.

    The only reason home made distilled liquor is illegal is because it means the government doesn't collect taxes on it.

    Problems are probably space and privacy where you are. 30 gallons is a big rig to hide. The corn is not going to smell that great so outside is better but temperature is a problem in FL. Then you have to figure out how you are going to dilute it to your liking. Then you need to age it

    Sounds like a good reason to head back to the old homestead and see if the relatives can hook you up with a local expert. You might make it back with some samples to keep you satisfied for a while.
