    Do you eat hyacinth beans?

    I've planted hyacinth beans for years. They have a beautiful vining habitat with a gorgeous purple flower...the hummingbirds love them! I had always heard that they were edible but had never cooked any. Well.....today I did .....and..... wow...I am now an official hyacinth bean lover! They are very tasty and the link will tell you their many health benefits! Enjoy!!!

    How do you cook them, in a pot with a little water?

    Interesting. Beautiful flower. Looks like they really run. Where did you get the seeds? I wonder if they can grow in zone 5?

    I'd smother um down with some bacon and pickled salt shoulder. Mmmm. Mmmm.

    I've also gathered and eaten water hyacinth blossoms while commercial fishing in Atchafalaya Basin. They taste like watermelon.

    I've never seen them in a grocery store, so probably the best thing would be for you to go to your local feed and seed store or order a pack of seeds from a seed catalog. Actually, come to think of it, I believe I've seen them in the seed section at Walmart! Once you plant them you will have them every year as they drop seed and come back in the spring voluntarily. I'm always digging up the extras and transplanting them in small pots to give to friends and neighbors as they come by the farm.

    I saw that. They can really take over, but on a fence they would be great. I love the flower. You actually found them in Walmart? I'll have to write this down

    Yes...I boiled them in water with a bit of seasoned salt and a couple pats of butter! I only cooked them for probably less than 5 minutes.
