    If that's boneless pork loin, don't overcook because that's already pretty dry.

    I just cubed a third of a long, boneless pork loin for soup.

    I don't think I've ever fried boneless pork chops. I buy the cheap blade end pork chops for frying as they are well marbled and I fry them crispy like cracklins because season pork fat rules the taste world!

    I get a lot of whole loins and either grill them or air fry them seasoned. I don't over-cook them and they usually turn out ok, not as tender as fattier cuts granted but nobody complains, at all.

    Going to try not to over-fry them but I'm wondering if that they're being deep fried won't hurt. I ain't skeered, giving it a go.

    S'all good. They'll be ok. Tasty too. I like um kinda dry.

    I'm tempted to schnitzle thin pound them and bread them but I'll practice. Watching the game now, working on dinner in a couple hours. I don't have the meat selection out here, in Missouri when I lived there yeah, not in the desert though. Loins and butts is about it and I use butts for pulled pork.

    This inspired me to clean my smoker out today, smoking that turkey and a couple other things maybe on Thursday. Maybe some pasilla peppers I just got, for stuffing.

    How'd those jalapeno's turn out?

    I got an electric one 5 years ago, first smoker. Used it quite a bit. Think I'll go propane once this one is past it useful life which I'm hoping not soon.

    I need a propane grill. I'm funny about grills, I grill a lot. Has to be stainless or cast iron grates and most of the ones are ceramic which are crap, the ceramic just scrapes off and rusts and I'm not paying $750 for a grill but it's getting harder and harder to find a decent grill under that price range.

    Had a BHG with cast grates I got 5 years ago. It blew off the deck twice and I've lit it on fire 3 times, last time this spring and finally had to tank it. Never found a good replacement so I've been using a charcoal kettle grill.

    I have a commercial veal cutlet machine from my meat cutting days. I haven't used it in a decade. Makes deer cuts rock. I think it's in the shed. In the morning, I'm gunna locate it and that's gunna be my new project.

    Those work great. Anything with a thermostat or dial heat control.
    Charcoal smokers are a pain in the ass. Too much heat fluctuation and you almost always have to light a second batch of charcoal to finish a long smoke.

    Only thing about electric is you can't use dat at da camp or in da woods! Lol.
    Well, you can if you have a generator but your gunna have to run the generator a long time to smoke to fully cooked.

    Propane smoker is the best, all around. You can cook anywhere .
    Cheap too. Charcoal is expensive. A 5 gal(20lb) bottle of propane cost me about $14 at the local Ace Hardware.
    Wal-Mart exchange wants $14.98 for a 15 pound bottle.

    Many days I would put something in the propane smoker, set the dial to low(150-200) and spend 6-8hours on the tractor and come back to a great meal.

    I still prefer charcoal for BBQ. I hate propane grills.
    But for smoking, propane rules.

    I enjoy jalapenos but I hate their flavor when they're smoked.
