I am seriously thinking about making a brick wood fired smoker, pizza oven out side just for the hell of it. I figure we can always sit in front of it when it gets cool outside if I fail.

    Many years ago , i had a buddy who had a BBQ pit bolted down in the bed of his pickup truck. Lol.

    He would light the coals and then go down the road with the top down and the vents open to get them red hot. Then pull over, put the meat on, close the vents to just small cracks and continue the journey to wherever.

    Every few miles he would pull over to the shoulder to turn the meat. Lol.

    He smoked a lot of weed, so I guess he was hungry most of the time.

    Lol. One afternoon he came to visit us about 10 miles back in the woods. In those days the roads were dirt in old growth hardwoods. So once the road got wet, it had little chance of drying in the winter. It was rutted up pretty bad. 4-wheel drive was imperative.

    If it was wet, it might take all day to get to the camp, winching many times. Rough rutted road, even when dry.

    Thing was it was dry!
    But it still took two or three hours to get there. He decided he was gunna have him a good meal when he got there and lit his mobile pit when he left the last little town and put the meat on about a mile past the entrance gate. True to form, every 10 minutes he would stop to turn the meat. There was really bad ruts about a mile out from the camp.

    When he got to the camp, i asked him if he was smoking the meat. He said no.
    About ten minutes later, i looked again . Lots of smoke. Lol.

    I said you better go check on it. He said no, the coals were just about gone and they were only keeping the meat warm.

    About a mile out, when he hit dem ruff ruts, the grill came off and all the meat fell in the coals.
    That's why everything was smoking so much. Lolol.
    I still see the look of anguish on his face today.

    Wood, depending on the wood.

    Used to make chicken thighs over wood (in a truck tire rim pit) from a hanging grate from a cast tripod. Took 3 or 4 hours but it was amazing.

    Charcoal is what it is but it's not bad.

    I haven't had chicken thighs in ages. I like them baked and I really don't like to have the oven on much come mid-May. Now that it's getting chilly I'm going to grab some this weekend. Thanks for the inspiration.

    Yeah but it throws a different flavor in what you're making. Not in a bad way, it is what it is.

    Different from smoking or open wood.

    I sometimes do beer can chicken in a kettle grill with charcoal, I have a cast iron bread pan I use for water and a soaked wood chip metal thingy for a little more straight wood flavor beyond the charcoal impact.

    So many options...

    Been deep frying them lately, you can't over-cook thighs but the skin has to be crispy or it's all for naught.

    Basic buffalo sauce after the fry.
