Been deep frying them lately, you can't over-cook thighs but the skin has to be crispy or it's all for naught.

Basic buffalo sauce after the fry.

Agreed on the crispiness. I feel the same about all dark meat.

For sauce, I just use a good hot sauce.

Wood, depending on the wood.

Used to make chicken thighs over wood (in a truck tire rim pit) from a hanging grate from a cast tripod. Took 3 or 4 hours but it was amazing.

Charcoal is what it is but it's not bad.
