    Leftover Turkey? Here's What To Do With It

    Turkey Casserole

    (amounts will vary depending on the size of your casserole dish)

    You'll need

    2-4 cups of turkey, cut into bite-sized chunks
    a half pound or so of grated cheddar
    1 can of green chilies, cut up
    1 can of cream of chicken soup
    1/2 can of evaporated milk
    either a little or lot of fresh onion, depending on how into onion you are
    several flour tortillas

    Brown the diced onion in butter
    Line a greased casserole dish with flour tortillas, cut in half - points up
    Mix all ingredients together thoroughly and pour into the casserole dish
    Cover and bake in the oven at 350 degrees for 45 minutes.

    You will probably find yourself making this in the off-season with chicken, which works just as well.

    What's leftover turkey? Is there such a thing? I've never seen it.

    People actually LIKE turkey? I thought it was just something people agreed to tolerate for the sake of family!

    Seriously, Thanksgiving is the day of the year when I'm happiest about my conversion to vegetarianism. That way I get all the good stuff -- mashed potatoes and gravy, green bean casserole, dinner rolls, pumpkin pie, etc. -- without having to spend like five minutes at a time chewing on individual bits of turkey before I'm finally able to swallow it (and that was often with gravy topping). I think turkey was my least favorite meat product. Do not see the appeal. I see the appeal of like chicken, beef, various fishes, and the occasional ham for example and sometimes miss that stuff to this day, but not turkey. Waaaaay too dry, tasteless, and chewy. And I haven't even mentioned all the preparation yet! All that work just to prepare the worst Thanksgiving dish! Why? Why do we do this to ourselves? The pilgrims won't notice if we change! I mean people watch football today instead of having indigenous people over...but turkey we must keep? Whyyyyyyy???

    I love turkey. It's my favorite meat. It should be dry with plenty of gravy. BTW, Polly, you know that gravy isn't vegetarian. right?

    A conclusion you doubtless reached this morning immediately after noticing that I described it as having been my least favorite meat product.

    Whaaaatever, I don't care that much about nitpicky details like that anymore! Too much work looking up ingredients for everything and too many products to avoid. I keep it simple and avoid proper meats these days. That's more than most people do and good enough for me.

    This casserole is the ONLY reason I like Thanksgiving or turkey. Every year - since it's just the wife, the daughter and me now here in town - I suggest to the wife that we forego the big bird and do something else - anything else...but she's stuck on the tradition thing. (We also do a Honeybaked ham for Christmas every year, but you won't hear me complaining about that.) Since the leftover turkey (usually quite a lot of it) is there, I might as well make something scrumptious out of it. This casserole is wonderful.

    Another thing I do, which is probably kind of weird, is cut the white meat into strips about the size of a finger, and eat them cold, dipped in ketchup like French fries.

    For years I've been telling the family that just because they earned enough points to get a free turkey at the supermarket, they don't have to get a giant bird. After more than a decade, they finally listened and got a 12-15 lb. turkey. It tastes a lot better, and...there is NO leftover turkey.

    That casserole does look good, though
