In the Cormac McCarthy novel, 'The Road' - a post-apocalyptic story in which all vegetation has died and humanity has been reduced to scattered bands of starving and desperate people - there is an unforgettable scene in which some people are roasting a newborn baby. When the film version was underway, the Director insisted on filming the scene, but changed his mind before it was released.

The filmmakers changed the ending of Stephen King's 'Cujo' when they were making the movie, letting the young boy in the story live rather than be killed. King was reportedly okay with the change, saying something to the effect that books and films being such different media there are some things you can do in one that you can't (or really shouldn't) do in the other.
