Actually, I reconsidered your bodybuilder story. What he was most likely trying to convey (and it was utterly lost on you) was that he eats "lots of pasta" to gain weight. To grow muscle optimally, you need to be in a calorie surplus. That's where carbs come in. You're welcome.

He said, "This idea of 'a calorie in and a calorie out' when it comes to weight loss, is not only antiquated, it's just wrong...."

How your body burns calories is irrelevant. Protein, for example, has a higher thermic effect. All that impacts is the rate of energy output. You lose weight in a calorie deficit. That is, you have to expend more energy than you consume. It is still calories in versus calories out. Understand? Dr. Stanford is not refuting the laws of thermodynamics.

On your list of foods that are high in lectins you have wheat. That's one reason I stopped eating whole wheat bread and whole wheat pasta a few months ago. But now I have learned that whole wheat pasta does not contain lectins. So I will happily be buying it again, it really adds a lot of enjoyment to a meal.

Whole wheat does contain lectins but in whole wheat pasta they are eliminated in manufacturing and cooking.
