    I would turn excess broccoli into any type of soup that you like, and then freeze it.

    I hear you. I almost always choose chicken or beef stock over vegetable stock. I use chicken stock for split pea soup, for example. Sometimes, I just skip the stock and simmer soup with a strongly flavored piece of pork. Something about pork and soup...

    Yes, I even add a little fried bacon or a piece of ham to my lentil and/or pea soups while I'm doing the onions, carrots and other ingredients. It makes all the difference in the world.

    I go with bacon most of the time because I only eat ethically raised pork. It's not easy to find smoked ham hocks that are certified humane. I have to be opportunistic. Humanely raised poultry and poultry products are all over the fn place. Pork not so much.

    Onion is a mainstay. If I forget the carrots...shrug. Lentils are pretty good with a teaspoon of bacon grease and salt. I started making a cup of dry lentils for lunch when the quarantine started. I was working at home so why not? It was quick, delicious and nutritious. Sorry to sound like an infomercial lol

    I like to mix broccoli, cauliflower, and cabbage and make soup with it. That is something that could be frozen for later.

    Perhaps if you could find a butcher shop that deals with a local farm, it would increase the number of pork products that you can buy, though you might not necessarily find smoked ham hocks. Some farms do smoked meats but not all.
