I go with bacon most of the time because I only eat ethically raised pork. It's not easy to find smoked ham hocks that are certified humane. I have to be opportunistic. Humanely raised poultry and poultry products are all over the fn place. Pork not so much.
Onion is a mainstay. If I forget the carrots...shrug. Lentils are pretty good with a teaspoon of bacon grease and salt. I started making a cup of dry lentils for lunch when the quarantine started. I was working at home so why not? It was quick, delicious and nutritious. Sorry to sound like an infomercial lol

Definitely. lol @Cletus it's just a vegetable I toss with my whole grain pasta or add as a side to trout or some other protein.
